Pumpkin Portobello Bolognese Sauce Recipe

Fall is here! Ahh, the time of pumpkins, apple cider, crisp air, and hoodies. It’s such a great time of year, and I seriously love all the flavors of this season. Since I’m feeling fall-inspired, I want to share with you a recipe that is a definite fall favorite in our house: Pumpkin Portobello Bolognese sauce!

This healthy fall recipe is quick and easy to make, and super delicious! It'll be your new favorite fall pasta sauce!

I know, I know, I already have a bolognese sauce recipe on the blog. But this one is special, and it only comes out one time of year around here (because just like how I don’t play Christmas carols in June, I don’t rock the pumpkin flavors until September hits).

This recipe was inspired by one that used to be on Georgie Fear’s blog, but her site was hacked a while ago and the recipe hasn’t made a reappearance yet. If it ever does, I’ll link back to it here.

Without further ado… I present one of my favorite fall comfort food dishes:

Pumpkin Portobello Bolognese Sauce

Ingredients

  • 1 lb ground beef
  • 8oz portobello mushrooms, chopped finely (I use and LOVE this mini “lawnmower” food chopper! It’s just the right size, easy to clean, and takes up so much less space than a whole food processor.)
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 Tbsp minced garlic
  • 28oz can diced tomatoes
  • ½ jar tomato sauce (or more if needed)
  • 1 14oz can pumpkin
  • 1 tsp cinnamon
  • Scant tsp salt
  • ½ tsp clove
  • ¼ tsp pepper

I use this BIG pan with high sides. It holds a lot, and the non-stick on it is amazing!

Directions

Brown the beef in a large pot until cooked through.

Add chopped onion, bell pepper, and mushrooms, cook until soft.

Add tomatoes, sauce, garlic, pumpkin, and spices.

Simmer for 20 minutes.

Serve over pasta, spaghetti squash, or zucchini noodles.

Let me know if you try it!
